PREPARATION STAGES
- 1. Peel and chop the sweet potatoes and cook in a pan of water for about 20 minutes.
- 2. Drain the sweet potatoes and mashed potato the pieces.
- 3. Separate the egg whites from the yolks.
- 4. Whisk the egg whites in a bowl.
- 5. In a separate bowl, mix the flour, baking powder and Natiwé whey protein.
- 6. Add the egg yolks and milk, then the melted butter and nutmeg.
Season with salt and pepper.
Mix until smooth. - 7. Add the mashed sweet potatoes, then the egg whites.
- 8. Cover the bowl with cling film and leave the dough to rest for 30 minutes.
- 9. Cook your waffles in your waffle iron, using butter to prevent the batter from sticking to the plates.
Accompany your savoury waffles with a slice of smoked trout, chopped avocado and fromage frais mixed with chives.
